Our Story
Prickly Bear began with a dream years in the making.
For nearly two decades, Scott and Caitlin built successful careers as scientists. Their work contributed to meaningful advances in their fields, but deep down they shared another dream—building something of their own that would bring joy directly to people.
That dream became reality when Prickly Bear LLC was established in 2022.
Meet Scott
Scott was born and raised in the swamps of southern Louisiana, where New Orleans food and culture are simply a way of life. Growing up around authentic snoballs taught him exactly how they should taste—soft, fluffy ice soaked with bold flavors that instantly remind you of a hot Louisiana summer.
Before becoming a scientist, Scott proudly served in the United States Navy. His military service gave him the opportunity to travel throughout the world, experiencing different cultures and unforgettable foods along the way.
After spending the last 17 years working as a scientist, Scott decided it was finally time to pursue the business he had always imagined—one built around family, creativity, and making people smile.
The Prickly Bear character itself was inspired by Scott and reflects his adventurous spirit, love of travel, and larger-than-life personality. The pinecone design was Aster's creation. This acknowledgment satisfies one of the key terms in her ongoing negotiations with management (Dad).
Meet Caitlin
Caitlin grew up in Mississippi, where family meals and homemade recipes were at the center of everyday life. With roots that blend Southern country traditions and Cajun heritage, she developed a deep appreciation for comfort food, bold flavors, and welcoming hospitality.
She is an exceptional cook whose creativity and attention to detail help shape many of the recipes and flavors you’ll find at Prickly Bear.
Like Scott, Caitlin also spent 15 years working as a scientist, contributing to important scientific advancements before helping turn a lifelong dream into a family business.
Her passion for food, family, and creating memorable experiences helps ensure every product reflects the quality and care that Prickly Bear stands for.

Prickly Bear was never meant to be just another dessert trailer.
We’re building a brand centered around family, fun, adventure, and unforgettable treats. While we’re beginning with handcrafted cream-based popsicles, fresh fruit popsicles, authentic New Orleans-style snoballs, and Philadelphia water ice, this is only the beginning.
Our vision includes catering, private events, retail products, apparel, hats, mugs, stickers, toys, collectibles, brick-and-mortar locations, and many other exciting opportunities that allow people to take a little piece of Prickly Bear home with them.
Every new chapter will stay rooted in the same idea that inspired us from the beginning: serve amazing desserts, create lasting memories, and build something our family—and yours—can enjoy for generations.
